Technology & Performance

Wolf cooking appliances use dual-stacked sealed burners on gas ranges, delivering precise heat control from a very low simmer to a high sear. Ovens use a dual convection system with multiple burners and fans to maintain even temperatures throughout the cavity. All Wolf products are designed and tested for a 20-year lifespan and manufactured in Madison, Wisconsin.

Wolf wall ovens and dual fuel ranges use a dual convection system with two fans and multiple heating elements. This circulates heat evenly throughout the entire oven cavity, eliminating hot spots and producing consistent results whether roasting, baking, or broiling. A standard single-fan oven cannot maintain the same temperature uniformity, particularly on multiple racks simultaneously.

VertiCross is Wolf's convection system used in selected wall oven models. Two vertical fans work in opposing directions to create a crossflow of heat that moves evenly across all rack positions. This means multiple dishes can be cooked simultaneously without rotating trays or adjusting temperatures.

A dual fuel range uses a gas hob combined with an electric convection oven. This gives the precise, responsive heat of gas burners on the surface with the consistent, even baking performance of electric convection in the oven. An all-gas range uses gas throughout, including the oven, which suits those who prefer gas cooking across all functions or where an electric supply to the oven position is not practical.

Most Wolf wall ovens and dual fuel ranges use dual convection fans. The exception is the smaller oven on the 122cm dual fuel range, which has a single fan. In double oven configurations, the upper oven has dual fans; the lower oven does not have a fan. Please refer to the specification sheet for your chosen model to confirm fan configuration.

Only when Convection Broil is selected. If standard Broil is selected, the fan does not operate.

Yes. The red indicator light turns off when the oven has reached the set temperature.

Cooking Modes & Use

The smaller oven offers eight cooking modes: bake, roast, broil, convection bake, convection roast, convection broil, convection, and bake stone. The bake stone mode requires the bake stone accessory.

Yes. Both ovens are convection, though each can also be operated without the fans if preferred.

Run the oven at 232°C (450°F) for two hours before first use. This burns off any residual manufacturing oils and prepares the oven interior.

No. Do not place cookware, foil, or any other material on the oven floor or side walls. Doing so will permanently damage the porcelain interior.

No. Griddles and charbroiler grills are not interchangeable on Wolf rangetops.

No. The burner and grid will burn off grease during use, but the surrounding steel must be cleaned by hand.

A Wolf warming drawer holds cooked food at a precise serving temperature without continuing to cook it. It can also be used to prove bread dough, warm plates, and keep dishes ready while the rest of a meal is prepared. Warming drawers are available as standalone built-in units or as part of a Wolf cooking suite.

Induction cooking requires magnetic cookware. Cast iron, magnetic stainless steel, and induction-compatible pans will work. Aluminium, copper, and non-magnetic stainless steel pans will not. Most modern cookware is labelled to indicate induction compatibility.
