What actually happens when you sear a steak?
Searing is the Maillard reaction: a set of chemical changes between amino acids and sugars that begins in earnest above roughly 140°C and accelerates as the surface gets hotter. It is what produces the deep brown crust, the roasted aroma and the savoury complexity that a gently cooked piece of meat never develops. The reaction needs a dry surface and high, direct heat, and it needs that heat to stay high when the cold pan and colder food try to drag the temperature down.
That last point is the one domestic cooktops fail on. A burner that produces a respectable flame in isolation can collapse the moment a heavy pan and a cold steak land on it, and a sear that should take a minute a side turns into a slow, grey stew. The professional answer is not just a bigger flame. It is a burner designed to deliver high output and then recover it quickly, paired with a cooking surface heavy enough not to lose its heat in the first place.
What makes a Wolf cooktop different?

Dual-stacked means there are, in effect, two burners in one: an upper tier engineered for high heat, and a lower tier for gentle, controllable low heat. The upper tier is built for the fast boils and intense sears where you want everything the burner has. The lower tier gives you a genuine simmer, the kind that holds a sauce without splitting it or catching. Above the burners sit continuous cast-iron grates. They let you slide a heavy pan across the whole cooktop without lifting it, and, being cast iron, they carry and hold heat rather than wicking it away from the pan. Do you need a griddle or a chargrill for the best sear?
Not necessarily, but the option is worth understanding, because it lets you specify the cooktop around the way you actually cook. An infrared griddle gives you a large, flat, evenly heated surface, which is what you want for searing several pieces at once, for scallops or for anything you would otherwise crowd in a pan. A chargrill gives you the direct radiant heat and the bar-marks of an outdoor grill, indoors and year-round. A wok burner concentrates a very high flame for the fierce, mobile heat that stir-frying and fast searing both rely on. None of these is required for a good sear from the standard burners. Each is there so a keen cook can build the cooktop that suits their cooking rather than settling for a fixed layout.
Gas or induction for searing?

Gas gives you the visible, responsive, very high direct flame that many cooks associate with searing, and the dual-stacked burners described above are a gas design. It is the traditional professional choice and, for many, the intuitive one.
Induction takes a different route to the same result. Because it heats the pan directly rather than heating the air around it, it delivers intense, immediate heat with fast temperature response, and our induction range reaches a rapid boil quickly while staying cooler in the kitchen than gas. For searing specifically, induction's strength is the speed at which it reaches and recovers high heat, provided your pan is induction-compatible and heavy enough to hold that heat. If you want the flame, choose gas. If you want speed, precision and a cooler kitchen, induction sears superbly too.
